Chocolate Chip Pumpkin Cookies
One of the things I like most about autumn is baking. I have a sweet tooth to rival any, and it's one of the big challenges I have in the battle of the bulge. It comes from my mother and my grandmother, this love of making breads and pies and cakes and cookies.
I have two big faves to bake in the autumn, and chocolate chip pumpkin cookies are one of them. I baked a huge batch tonight (about five dozen cookies) that I'll be getting to friends in the coming days. It's probably the best part of baking: sharing the baked goods with friends and family.

1/2 cup softened butter
1 1/2 cups sugar
1 egg
1 1/2 cup canned pumpkin
1 tsp. vanilla extract
2 1/2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 teaspoon salt
1 tsp. nutmeg
1 tsp. cinnamon
1 1/2 cup semisweet chocolate chips
Cream butter and sugar together until light and fluffy. Beat in egg, pumpkin and vanilla. Mix and sift flour, baking powder, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture and mix well. Stir in chocolate chips. Drop onto baked cookie sheet. Bake at 350 degrees for 13-15 minutes.

Oh yummy! Makes me want to eat the screen! Send me a batch please :)

You have to "reframe" these things. Hmmm...With pumpkin in them, these cookies are actually health food.
See, that wasn't so difficult, was it?
