Blueberry Coffee Cake

This recipe for blueberry coffee cake is one of the best I've ever had. I stumbled across it last August, when the blueberries of Maine and New Jersey are at their peak. It would also make a great Christmas morning snack.

2 cups all-purpose flour
3/4 cups sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/8 cup vegetable oil
1/8 cup cream cheese
3/4 cup milk
1 egg
2 1/4 cups fresh or frozen blueberries
Sugar Topping

Preheat oven to 375 degrees. In a large bowl, combine
flour, sugar, baking powder, salt, vegetable oil,
milk, and egg. fold in blueberries.

Pour into an ungreased 8-inch square baking dish.
Sprinkle Sugar Topping (recipe below) onto top of cake batter. Bake,
uncovered, 50 minutes or until a toothpick inserted in
center comes out clean.

Makes 8 servings.

Sugar Topping:
1/4 cup butter, room temperature
1 tbsp. cream cheese
1/2 cup sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon

In a medium bowl with a pastry blender or two knives.
cut butter into sugar, flour, and cinnamon until well
blended.
